Remoska Roasted Gnocchi

This is a simple recipe for gnocchi and is perfect for the remoska in your Eriba’s kitchen (or home kitchen). As you can see from the photo below all the ingredients used are easily obtainable from supermarkets or high street shops, no need to go searching for specialist items.  

The recipe I give here is vegetarian, but can easily be adapted to use other ingredients such as bacon or pancetta. Likewise, I use mozzarella in this version, but you can you any cheese of your choice. A blue cheese such as Stilton or Gorgonzola will work just as well. It all depends on your tast! 

Ingredients

2 Echalion (Banana) shallots or 1 brown onion

500 grams Gnocchi

250 grams Chestnut Button Mushrooms

250 grams Babby Spinach

350 grams Tomato and roasted garlic pasta sauce

240 gram Ball of Mozzarella 

1-2 tbls of Olive Oil 

Salt and Pepper 

 

Method

Step 1. 

Heat up your remsoka while finely slicing your Shallots or onion. Mix your shallots and gnocchi in a bowl with olive oil and season with salt and pepper. Then add to your remoska and leave to cook for about 10 mins 

 

[If you prefer a meat option add 250 grams of diced bacon or pancetta at this stage.]  

Step 2

When the gnocchi and shallots have started to cook (about 10 mins) add the button mushrooms and cook for a further 5-7 mins. 

 

While the mushrooms are cooking roughly slice the baby spinach and grate the mozzarella ball.

 

[If you are going with a meet option you might decide to leave the spinach out – it is entirely your choice.]

Step 3

After the mushrooms have been cooking for 5- 7 mins add the spinach and stir so all ingredients are mixed.

Pour the tomato sauce over the top and return the lid to the remoska and allow to cook until the sauce is bubbling. 

 

[If you are using bacon or pancetta, you might want to change the tomato sauce to one that contains chili.] 

Step 4

Once the sauce is bubbling scatter the grated mozzarella over the top and continue to cook until the cheese is melted and browning.

 

The choice of cheese is open to your desire. You might chose to use a blue cheese or whatever your personal favourite is when melted. 

 

 

Then serve! Some crust bread would go well with this easy but hearty dish!
